Assamese-Style Chicken with Bamboo Shoots and Seasonal Vegetables
Ingredients
- • 300g chicken thigh, cubed
- • 100g canned bamboo shoots, sliced
- • 1 cup pumpkin, cubed
- • 1/2 cup French beans, chopped
- • 2 green chilies, slit
- • 1 tsp ginger-garlic paste
- • 1/2 tsp turmeric powder
- • 1 tbsp mustard oil
- • Salt to taste
Cooking Steps

Heat mustard oil in a pressure cooker until smoking.

Add ginger-garlic paste and chilies; sauté for 30 seconds.

Add chicken and sear for 3 minutes.

Add vegetables, turmeric, and bamboo shoots; stir for 2 minutes.

Add 1 cup water, seal the cooker, and cook for 2 whistles on medium heat.
